Mountain Cookin' with Missy's Red Velvet Cake -- a delicious treat for a special occasion or the whole family!

- 3 9-inch cake pans
- 1 Spoon or spatula
- 1 Hand Mixer or Countertop Mixer
Ingredients

2½ c all purpose flour

1½ c sugar

1 tsp salt

1 tsp heaping tsp cocoa powder

1 c buttermilk (room temperature)

1½ c canola oil
-
2 eggs (room temperature)

1 tsp vanilla
-
1 1-ounce bottle red food coloring
-
1 tsp vinegar
-
1 tsp baking soda

Chopped Pecans
Directions
Preheat oven to 325 degrees.
Grease and flour three 9-inch cake pans.
Sift flour, salt, sugar and cocoa together. (2½ c all purpose flour, 1½ c sugar, 1 tsp salt, 1 tsp heaping tsp cocoa powder)
Add buttermilk, food coloring, oil, eggs and vanilla to the dry ingredients. (1 c buttermilk, 1½ c canola oil, 2 eggs, 1 1-ounce bottle red food coloring, 1 tsp vanilla)
Mix well, but don’t over mix.
Finally, mix vinegar and soda together, then add to the batter folding in gently. (1 tsp vinegar, 1 tsp baking soda)
Pour into pans, dividing the batter evenly between each pan.▢
Tap the pans to remove the bubbles.
Bake for 30-35 min till done. Don’t over bake.
Cool cakes completely before frosting. Garnish the top with chopped pecans.
