In a heavy saucepan over medium heat, combine the sugar, milk, cocoa and butter. (2 c sugar, 1/2 c whole milk, 1/4 c cocoa powder, 3/4 stick softened unsalted butter)
Cook and stir, bring to a boil, stirring constantly and let boil for about one minute.
Remove from heat.
Add in the peanut butter and vanilla. Stir till smooth. (3/4 c peanut butter, 1 tsp vanilla extract)
Add in about 2 cups of oats.
Stir, then add more oats to get the desired consistency.
Work quickly as they will start to set up fast. (2-3 c quick oats)
Drop by the spoonful on buttered waxed paper.
Let cool till set.
