Mountain Cookin' with Missy's Fried Rice recipe -- a delicious Asian side that could be served with chicken, beef or as a snack.
Kitchenware
- 1 Hot Wok or skillet
- 1 Spoon or spatula
- 1 Whisk
- 1 Cutting board
- 1 Paring knife or food chopper chopped green onions for garnish
Ingredients

1 lb jasmine rice (cooked according to directions, let it cool, then chill)

½ c Soy Sauce (or to taste)

½ c Teriyaki Sauce (or to taste)

1 small bag of frozen mixed peas and carrots (thawed)

1 chopped onion

2 eggs

Sesame Oil (just a few drizzles)

Vegetable oil and butter

Chopped green onion for garnish
Directions
In a hot wok or skillet, add vegetable oil and a few pats of butter (Vegetable oil and butter)
Add cold rice, Soy Sauce and Teriyaki Sauce to taste. I add a little at a time as I go and taste it. (1 lb jasmine rice, ½ c Soy Sauce, ½ c Teriyaki Sauce)
Add Sesame Oil, just a couple drizzles (It’s very strong, but adds great flavor.) (Sesame Oil)
Stir rice and add more vegetable oil and butter, if needed, to keep the rice from sticking (Vegetable oil and butter)
Add veggies and continue stirring (1 small bag of frozen mixed peas and carrots, 1 chopped onion)
Move rice to the side, add eggs and scramble to almost done, then add them to the rice mixture (2 eggs)
Continue to stir, taste and add additional sauces, if needed.
Top with chopped green onion. (chopped green onion for garnish)
