Grease a large cast iron skillet (I use a 10 inch). Place the skillet in the oven and let it get hot. (¼ c lard/shortening for greasing skillet)
Mix the corn meal mix, buttermilk, melted butter and eggs in a large bowl till well combined but don’t over stir. (3 c self-rising corn meal mix, 1 ¾ c buttermilk, ½ stick of melted butter, 2 large eggs)
Sprinkle some of the dry corn meal mix in the hot skillet (a little secret to a crunchy crust) (3 c self-rising corn meal mix)
Pour the batter into the hot skillet and bake for 30-40 minutes till brown.
